Kvit Ole & Olebrim
Making cheese at the summer farm.
Thomas and Kathrin have a mini-cheesery set up at their summer farm in Valdres, Norway. "Kvit Ole" is a semi-hard cheese made from raw, organic goat milk.
The left over whey is normally given as feed to their three happy pigs. But once a week, they light up the wood burning stove, and make their version of the traditional Norwegian brown whey cheese. "Olebrim" is caramelised whey, with a bit of goat milk and goat cream mixed in.
